What can set a festive mood better than the smell of an apple pie? This recipe will provide you with the perfect lower-carb version of your favorite dessert.
Ingredients
-1 ¾ cup almond milk
-2 eggs
-2 apples
-2 cups rolled oats
-1 tsp cinnamon
-1 tsp baking powder
-2 tsp vanilla extract
-¼ tsp salt
-½ cup pecans, chopped
-maple syrup or honey (optional)
Useful tip
Feel free to swap pecans for any other nut you like. You can also experiment with other spices like nutmeg.

Directions
Preheat the oven to 375 degrees Fahrenheit and grease the baking dish. Mix dry and wet ingredients in two different bowls. Use a larger bowl to mix rolled oats, baking powder, salt, and cinnamon. In a smaller bowl, stir together eggs, almond milk, and vanilla.
Combine everything, and add cored and peeled apple slices and chopped pecans. Bake for about 40 min. Top the pie with pecans.

If you want to add more sweetness, drizzle the pie with raw honey or maple syrup. You can also add these when mixing wet ingredients — just be mindful about the amount.
