This recipe is an amazing alternative to classic pasta. Super easy, low carb, gluten-free, and full of protein and fiber.
Ingredients
-3 zucchini
-2 tbsp olive oil
-1 lb shrimp
-1 shallot
-4 cloves garlic
-parmesan cheese
-salt and pepper to taste
Useful tip
In case you don’t eat cheese, you can easily skip parmesan, as it’s used only when serving. But it amplifies the taste, so feel free to experiment with other ingredients.
Directions
Using a spiralizer, make zucchini spaghetti. Chop the shallot and garlic cloves.
Grease the skillet with 1 tbsp olive oil, add shrimp, half of the chopped garlic, and salt to taste. Cook for a minute without stirring, so that the shrimp becomes a bit crispy. Stir occasionally, and cook for a couple of minutes more. Set aside.
Heat another tbsp of olive oil in a skillet. Add remaining garlic and shallot. Cook for a minute and then stir in zucchini pasta. Add salt and pepper. Cook for a minute or two so the spaghetti is not overcooked.
Add the shrimp to your skillet and stir for a minute. Serve right away. 🧀 Don’t forget to top your pasta with parmesan!
