The classic egg salad has undergone a little transformation. Now this protein-packed egg and veggie wrap has every chance of becoming your lunch-time favorite.
Ingredients
-2 small whole-grain tortillas
-1 cup spinach
-1 carrot
-2 eggs, hard-boiled
-1 avocado
-4 tsp Greek yogurt
-1 tsp mustard
-salt and pepper to taste
Useful tip
Want to cut back on carbs? Swap the tortillas for lettuce leaves. π₯¬
Directions
Gently stir the eggs with Greek yogurt and mustard. Thinly slice spinach and carrot. Mash the avocado with salt and pepper.
Spread the avocado mixture over the tortillas and fill with veggies and eggs. Roll and enjoy!
